Business Plan
We are opening a second brick and mortar, full service restaurant. We plan to add retail space and also sell prepared, take home meals. We also plan to add a patio to the existing restaurant and eventually include premade, heat at home meals. We currently source ingredients from local farms and ranches and have begun producing some of our own agricultural products. In the next year we will add dairy and beef cows to our "farmette" where we already produce poultry products, vegetables, and fruit. Raven & Lily is working to shore up our business, home and community against supply chain problems and economic upheaval such as the covid pandemic shutdown. We will be able to thrive, serve the community and support local agriculture while tapping into our local economy instead of relying upon international or national corporate suppliers. Raven & Lily weathered the storm of pandemic closures. We learned that strength to survive also requires flexibility and a willingness to adapt our business to accommodate new challenges.

Self Identified Competition
Our competitors are other independently owned, upscale restaurants. David Grisanti's, Highlander Pub and Restaurant and Cafe Piazza are located within one block of our establishment. They are all very good, independently owned restaurants with comparable price points. We share the same neighborhood customers and town square location. We are set apart from these establishments in several ways. We make all of our food from scratch sourced from local farms and ranches. Secondly, we have a classically trained chef who uses his skill to produce approachable casual meals and also delivers gourmet menus for special occasions. We also are committed to pay our employees and a good, living wage as we believe you have to pay for quality in product and in labor.
