Once I have the truck and trailer I plan to sale food on a regular basis, starting on weekends only until my wife completes college and gets a full time position, then operating 5 days per week. Spices and rubs are already selling and volume is growing. as volume exceeds current production methods a commercial processor will be used for packaging product. I have been dreaming and planning this business for almost a decade. I have a solid business plan, and I know the business will be successful. We have been highly successful in our previous operations, at events, and will continue to be as successful or more successful in the future . Funding is required to obtain the proper equipment so, on a larger and more consistent scale, we can provide safe and consistent products.

Self Identified Competition
Honestly, I would be in competition with any restaurant or mobile vending operation. I am starting a food truck and catering service. The market for this is huge even if it contains a high risk. Other competitors would include Mountain Man, and Kinder's who are both spice and flavoring providers. Again, this is a huge market. I have taken what I learned in Culinary school, living in the Texas Panhandle, and growing up in New Mexico to combine BBQ and other foods that have the authenticity of Texas or Kansas City style BBQ with a New Mexico flare. There are a lot of restaurants out there. None of them are the same. Our food is prepared with perpetual recipes, our way. These recipes have been proven through events we have cooked in to be highly praised by our customers.
